Vegan Coconut Smoothie

Vegan Coconut SmoothieCoconuts were on sale at the market this morning for 99 cents, so I brought one home.   I had no idea what I would do with it at the time, but what the heck.  Opening one is half the fun.  I started by Googling “opening a coconut” and came up with everything from step-by-step instructions to videos on You Tube.  What ended up working was a corkscrew in one of the eyes (the softest one) to drain the water.  That went fine.  Then I tried whacking with a large spoon and then a cake slicer, none of which worked.  I was way to scared too use the back of a chef’s knife as shown in one of the videos.  I finally ended up in the basement with the coconut wrapped in a tile.  With the package on the concrete floor, I simply whacked at it with a hammer after the scoring one of the sides with a saw.  Worked beautifully.  The coconut meat was easy to extract after it was all in little pieces.

Now what I do with it?  Inspiriation struck and I placed some of the meat in a blender with a frozen banana, a bit of the coconut water, and some soy milk.  Amazingly delicious and so decadent!  Definitely a treat, but what a treat at that.
